Eat your veggies! You’ve likely heard this one before. Well we are not here to tell you anything to the contrary. Veggies provide poweful micronutrients and fiber to the diet that help improve the gut biota (bacteria), digestion, and blood sugar regulation.

Today’s tip is actually about eating your veggies with fat. When you eat vegetables with fat (oil, butter, lard) you can enhance the absorption of many of the vital nutrients within your food. Micronutrients within vegetables (vitamins and minerals) can be categorized as water soluble or fat soluble. This means that some micronutrients prefer to hang out in a water bath while others prefer to hang out in a fat bath.

Therefore, if we eat our vegetables with some fat on them, we can improve the absorption of the fat soluble vitamins and minerals found in our food. The downstream benefits to this could include feeling more satiated since you more fully absorbed your nutrients.
